Strawberry Rhubarb Custard Pie

From famous apple pie coming from United States, nowadays, there are several innovations and versions developed from the traditional recipe. People also realized that many fruits can go well with pie recipe like apple and one of them is strawberry. The fruits are expected to bring balance to the pie so that people don’t feel tired of the sweetness. Pie crust also adds excitement for the pie. Today recipe is a beautiful pie recipe with strawberry rhubarb: the strawberry rhubarb custard pie.

Strawberry rhubarb custard pie

Ingredients (prep will take about 20 minutes)

  • 1 (9 inch) unbaked Pie Crust
  • 3 cups of Rhubarb (sliced 1/4 –inch thick)
  • 1 cup of Fresh Strawberries (quartered)
  • 3 large Eggs
  • 1 ½ cup of White Sugar
  • 3 tablespoons of Milk
  • 3 tablespoons of All-purpose Flour
  • ¼ teaspoon of freshly grated Nutmeg
  • 1 tablespoon of Butter (diced)
  • 2 tablespoons of Strawberry Jam
  • ¼ teaspoon of Water

Cooking (cooking will take about 1 hour)

Step 1 – preheat the oven and prepare the pie crust: Preheat the oven up to 350 degrees F (175 degrees C). Then take out the pie crust with a 9-inch pie plate. Place the rolled-out pie crust onto the plate. Set up the baking sheet with parchment paper or a silicone baking mat.

Step 2 – make the pie filling: In a medium bowl, add 3 cups of rhubarb and 1 cup of quartered fresh strawberries. Combine the ingredients together and transfer the strawberry mixture to the pie crust. Spread the mixture evenly in the pie plate.

Take out a large bowl, add 3 large eggs, 1 ½ cup of white sugar, 3 tablespoons of milk, 3 tablespoons of all-purpose flour and ¼ teaspoon of freshly grated nutmeg into the bowl. Use a hand mixer or electronic mixer to whisk all the ingredients. When the milk mixture is well mixed, gently pour the mixture onto the rhubarb layer until it reaches the top edge of the pie crust. Use a spoon to spread the mixture evenly. Then scatter diced butter evenly over the top of the pie. Finally, lightly tap and shake the pie plate in order to remove any bubbles.

Step 3 – bake the pie: When the pie is well assembled, take the pie to the preheated oven and bake for about 1 hour until the rhubarb is tender and custard is set.

Step 4 – topping the pie: Take out a bowl and mix 2 tablespoons of strawberry jam and ¼ teaspoon of water. Whisk them together and heat in the microwave for about 15 seconds. When the pie is nicely baked, top the pie with strawberry jam and let the pie cool in the fridge until you serve it.

Ingredients (prep will take about 10 minutes)

  • 2 ½ cups of All-purpose Flour
  • 1 cup of unsalted Butter (chilled and cut into tablespoon size)
  • ½ teaspoon of Salt
  • 7 tablespoons of Ice Water
  • 1 tablespoon of Cider Vinegar

Making (making will take about 30 minutes)

Step 1 – make the pie dough: In a food processor container, add 2 ½ cups of all-purpose flour with ½ teaspoon of salt, 1 cup of unsalted butter. Pulse until all the ingredients come together and resemble coarse crumbs which will take about 10 time pulses, each pulse lasts for 1 second.

Stir 7 tablespoons of ice water with 1 tablespoon of cider vinegar in a small bowl. Then pour half of the liquid into the butter and flour mixture. Turn on the food processor for about 3 pulses more for the flour and vinegar mixture combined. After that, pour the remaining liquid into the food processors and mix until the mixture is well combined which will take about 8 pulses.

Step 2 – roll the crust: The crust dough is ready when it has smooth texture and start to separate from the food processor’s container. Take the dough out and place it onto a floured wooden surface. Pat and press the dough until it turns into round shape. Divide the dough into 2 pieces and form each piece into a disc shape with 5 inches wide. Wrap the dough with plastic wrap and put them into the fridge for at least 30 minutes or until you use.

The strawberry rhubarb custard pie will have nice crust outside and moist flavorful filling inside. The acidity of strawberry will balance the sweetness which will not make you feel fed up with over-sweet flavor. The pie will go perfect with ice tea or ice drinks. You also can top the pie with whipping cream or fresh strawberries. This pie is also a perfect recipe for tea party.
